They ate the invader: 370 people, 30 chefs and 20 recipes set a record against the lionfish

The lionfish is beautiful, venomous and a disaster for Mediterranean reefs, where it has no natural predators and eats its way through native species. On Santorini, the University of the Aegean's GuardIAS project answered with appetite: 30 chefs cooked the invader 20 different ways, and 370 participants each tasted at least three recipes — earning a Guinness World Records title for the largest lionfish tasting event. The two-day 'From Threat to Opportunity' gathering paired the feast with science sessions and public awareness work, making the conservation case the delicious way: every lionfish on a plate is one fewer hunting on the reef.

The upbeat factoran ecological problem served grilled, fried and ceviche-style — conservation you can literally taste working.
